All of our Salami and Chorizo are handmade using 100% hand-trimmed pork from our own free-range, rare breed pigs. The meat content is very high; between 80 and 85%.
Our partner curer uses local oak chippings in their in-house smoker to smoke every individual salami to perfection.
The Heritage breed is Middle White Pigs which originated from Yorkshire! Its name comes from the fact that it was between the size of the Large White and the now-extinct Small White.
Straight from the beautiful woodland and fields surrounding Ampleforth and Wass, the pork has been cured and made into Salami. Ideal for grazing plates or for a light lunch.
Goes well with Smoked Apple Butter.
Serving suggestion: delicious with your favourite cheese on sourdough bread, in pasta dishes, on pizza’s, or chop, fry and use as a topping to a salad or soup.
