Our plump Gressingham duck breast is brined to keep it moist and then cold smoked to intensify the flavour.
Stage two sees the duck breast hot smoked so that it is cooked through but still retains a beautiful pink meaty centre. Our duck has a rich flavour, and is delicious served sliced with a fresh salad and a sharp vinaigrette.
